America Cooks makes its fifth stop in Seattle, where Chef Maria Hines helms Tilth, one of the country’s first restaurants to be certified organic by the sustainability advocacy group Oregon Tilth.

Maria is all about food sourced responsibly and prepared with care, so we matched her with Jonathan Saturay, a food educator originally from Seattle, now living in New York City. Jonathan’s family is Filipino, and they love the traditional cuisines of the Philippines. Jonathan worries, though, that the food they’re eating is causing harm to their health, including bringing on diseases like diabetes. To address the problem, Jonathan and Maria prepare a simple chicken adobo with brown rice that pays homage to the flavors of Filipino cuisine, making it lighter and more nutritious.
